  • 3/4 cup brown sugar, packed

  • 1 cup semi-sweet chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, then mix in vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet ingredients until combined.
  4. Fold in chocolate chips evenly into the cookie dough.
  5. For the cheesecake filling, blend cream cheese with sugar and vanilla until smooth.
  6. Take about two tablespoons of cookie dough, flatten it slightly, place one tablespoon of cheesecake filling in the center, and wrap the dough around it completely. Roll into a ball and place on the baking sheet.
  7. Bake for 12-15 minutes or until edges are lightly golden. Cool for five minutes before transferring to wire racks.
