1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
24 oz cream cheese, softened
1 cup granulated sugar
1 cup sour cream
2 tsp vanilla extract
1 cup chopped pecans
1 cup caramel sauce
Instructions
Preheat your oven to 325°F (160°C). Grease a springform pan or line it with parchment paper.
In a large bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
Press this mixture evenly into the bottom of the prepared pan.
In another bowl, beat softened cream cheese with an electric mixer until smooth and fluffy.
Gradually add sour cream and vanilla extract while mixing until fully incorporated.
Slowly add sugar and mix until combined; gently fold in chopped pecans.
Pour the filling over the crust, smoothing it out evenly.
Bake in preheated oven for 50-60 minutes until set around the edges but slightly jiggly in the center.
Allow cooling completely before refrigerating for at least four hours or overnight.
Drizzle generously with caramel sauce before serving.
