  • 1 lb ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 2 cups mashed potatoes (made with ½ cup butter and ½ cup cream)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce the baking potatoes with a fork.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender. Let cool slightly before handling.
  3. In a skillet over medium heat, brown the ground meat with chopped onion and diced carrots for about 8-10 minutes.
  4. Stir in frozen peas, beef broth, Worcestershire sauce, salt, and pepper; simmer for 5-7 minutes until thickened.
  5. In a separate bowl, mash boiled potatoes with butter and cream until smooth; season to taste.
  6. Cut each baked potato open lengthwise and fluff the insides. Spoon in the meat filling, top with mashed potatoes, and return to the oven for an additional 15-20 minutes.
