  • 2 bell peppers (red or yellow), diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent. Stir in minced garlic for about one minute until fragrant.
  2. Add sliced carrots, chopped zucchini, and diced bell peppers; cook for five minutes until they soften.
