  • 34 lbs chuck roast
  • 2 large sweet onions (yellow or Vidalia), sliced
  • 1 cup low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode. Heat olive oil and cook sliced onions until golden brown (about 10 minutes). Remove onions and set aside.
  2. Season the chuck roast generously with salt and pepper. Sear in the pot until browned on all sides (about 4-5 minutes per side).
  3. Deglaze the pot with red wine, scraping up browned bits; simmer for 2 minutes.
  4. Return onions to pot along with beef broth, garlic, thyme, and balsamic vinegar. Stir well.
  5. Close lid and set to high pressure for 60 minutes. Allow natural pressure release for 15 minutes before quick-releasing any remaining steam.
  6. Let rest for at least 10 minutes before slicing against the grain.
