  • 1 lb pizza dough (store-bought or homemade)
  • 1 cup ricotta cheese (whole milk)
  • 1 cup shredded mozzarella cheese (fresh)
  • 1/2 lb Italian sausage (spicy or mild)
  • 1/2 cup diced bell peppers (red, orange, or yellow)
  • 1 egg (for egg wash)
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the oven to 425°F (220°C). Let store-bought pizza dough sit at room temperature for 20 minutes.
  2. In a skillet over medium heat, cook the Italian sausage until browned. Add diced bell peppers and cook until softened. Stir in the ricotta cheese and half of the mozzarella until well combined.
  3. Roll out small portions of pizza dough into circles about six inches in diameter on a floured surface. Place a generous spoonful of filling on one half of each circle.
  4. Fold the dough over to cover the filling and pinch edges tightly to seal. Cut small slits into the top to resemble jack-o'-lantern faces.
  5. Brush each calzone with an egg wash made from a beaten egg mixed with water.
  6. Place calzones on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
