  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, sliced into wedges
  • 4 garlic cloves, minced
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper.
  3. Toss chicken thighs in the marinade and let them sit for at least 15 minutes.
  4. Arrange zucchini, cherry tomatoes, and red onion on the prepared baking sheet.
  5. Place marinated chicken on one side and drizzle any remaining marinade over all ingredients.
  6. Bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
