  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/3 cup honey
  • 1/3 cup freshly squeezed lime juice
  • 1/4 cup low-sodium soy sauce
  • 1 cup jasmine rice
  • 2 cups water
  • 2 ripe avocados
  • Salt and pepper to taste
  • Additional lime juice (optional)
  • Fresh cilantro or green onions

Instructions

  1. In a mixing bowl, whisk together honey, lime juice, minced garlic, and soy sauce.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Marinate for at least 30 minutes (up to overnight for more flavor).
  3. Rinse jasmine rice under cold water until clear.
  4. In a saucepan, combine rinsed rice and water. Bring to a boil, reduce heat, and cover until fluffy (about 15-20 minutes).
  5. While chicken cooks, mash ripe avocados in a bowl and season with salt, pepper, and lime juice if desired.
  6. Heat a skillet over medium-high heat with a splash of olive oil.
  7. Remove chicken from marinade (discard leftover marinade) and sauté for about 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
  8. On serving plates or bowls, layer fluffy jasmine rice as your base.
  9. Top generously with mashed avocado followed by sliced grilled chicken arranged beautifully.
  10. Garnish with fresh cilantro or green onions and drizzle with any remaining lime juice before serving.
