2 pounds Russet or Yukon Gold potatoes
4 tablespoons unsalted butter
1/2 cup heavy cream (or half-and-half)
3 egg yolks
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Boil the Potatoes: Peel and chop the potatoes into even chunks. Place them in a large pot with cold water, add a pinch of salt, and bring to a boil over medium heat. Cook until fork-tender, about 15-20 minutes.
Drain and Mash: Drain the cooked potatoes thoroughly and return them to the pot. Mash using a potato masher or ricer until smooth. Stir in butter and heavy cream until creamy.
Mix in Flavor: Add egg yolks, garlic powder, salt, and pepper to the mashed potatoes. Mix until fully combined.
Pipe It Up: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Transfer the potato mixture into a piping bag fitted with a star tip or use a ziplock bag with one corner snipped off. Pipe swirls onto the baking sheet.
