  • 1 lb ribeye or sirloin steak
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 4 oz Gorgonzola cheese, crumbled
  • 2 tbsp olive oil
  • 1/2 cup balsamic vinegar
  • 1 tbsp honey (optional)

Instructions

  1. Season the steak generously with salt and pepper.
  2. Preheat your grill or skillet over medium-high heat.
  3. Grill or sear the steak for about 4-5 minutes on each side for medium-rare doneness.
  4. Let it rest for at least 5 minutes before slicing.
  5. In a small saucepan over medium heat, combine balsamic vinegar and honey (if using).
  6. Simmer until reduced by half and syrupy, about 10-15 minutes.
  7. Rinse and dry mixed greens thoroughly.
  8. Place them in a large bowl as the base of your salad.
  9. Top the greens with halved cherry tomatoes, sliced red onion, and crumbled Gorgonzola cheese.
  10. Slice rested steak against the grain into thin strips.
  11. Place sliced steak on top of the salad.
  12. Drizzle generously with balsamic glaze and olive oil before serving.
