  • 1 pound fresh shrimp, peeled and deveined
  • 2 ripe mangoes, diced
  • 2 ripe avocados, sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Gather all your ingredients. Dice the mangoes and slice the avocados.
  2. In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, season the shrimp with salt and pepper, and sauté until pink and opaque (about three minutes per side).
  3. In a large bowl, combine diced mango, sliced avocado, red onion, chopped cilantro, and lime juice. Gently stir to avoid mashing the avocados.
  4. Spoon generous amounts of the mango-avocado mixture into bowls and top each with sautéed shrimp.
