  • 2 cups chopped cremini or shiitake mushrooms
  • 1 medium onion, finely chopped
  • 2 stalks celery, diced
  • 3 cups low-sodium vegetable broth

  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the wild rice under cold water. In a pot, combine wild rice and vegetable broth. Bring to a boil over medium heat, reduce to low, cover, and simmer for about 45 minutes until tender yet chewy.
  2. In a large skillet, melt the butter over medium heat. Add chopped onion and diced celery. Sauté for about five minutes until soft and fragrant.
  3. Stir in the chopped mushrooms and cook for an additional five minutes until they are golden brown and have released their moisture.
