  • 1/4 cup pure honey (60ml)
  • 1/4 cup freshly squeezed lime juice (60ml)
  • 1 tsp garlic powder
  • 2 ripe avocados
  • 1/4 cup fresh cilantro, chopped (15g)
  • 1 cup jasmine or basmati rice (185g)
  • 1/4 cup low-sodium soy sauce (60ml)

Instructions

  1. In a bowl, whisk together honey, lime juice, garlic powder, and soy sauce to create the marinade.
  2. Marinate chicken breasts in half of the mixture for at least 30 minutes.
  3. Preheat grill or skillet over medium-high heat and cook chicken for about 6 minutes per side until cooked through.
  4. Cook rice according to package instructions.
  5. Slice cooked chicken and layer in bowls: start with rice, add avocado slices, then top with chicken strips.
