  • 34 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup all-purpose flour
  • 2 eggs (beaten)
  • 1 cup seasoned breadcrumbs
  • 4 cups mashed potatoes (homemade or instant)
  • 1 cup gravy (store-bought or homemade)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or spray it with nonstick cooking spray.
  2. In three separate bowls, prepare your breading station: one with flour mixed with salt and pepper, one for beaten eggs, and one for seasoned breadcrumbs.
  3. Dip each piece of chicken in flour, then in egg, and finally coat it with breadcrumbs.
  4. Place the breaded chicken on the prepared baking sheet and bake for 20-25 minutes until golden brown and cooked through.
  5. While the chicken is baking, prepare your mashed potatoes according to package instructions or make homemade mashed potatoes.
  6. In a small saucepan over medium heat, warm up your gravy until hot but not boiling.
  7. Start by layering a generous scoop of mashed potatoes at the bottom of each bowl.
  8. Top with crispy chicken pieces followed by hot gravy.
