  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 2 cups fresh Granny Smith apples, thinly sliced
  • 1 tsp ground cinnamon
  • ½ cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press firmly into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar, then mix in sour cream. Add eggs one at a time until well blended.
  3. Stir in cinnamon and half the caramel sauce; fold in sliced apples. Pour filling over crust.
  4. Bake for 50-60 minutes until set around edges but slightly jiggly in center. Let cool with the oven door ajar for one hour.
  5. Refrigerate for at least four hours or overnight. Drizzle with remaining caramel before serving.
