  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 1 cup red lentils (200g), rinsed
  • 1 medium onion (about 150g), finely chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 cup rolled oats (90g)
  • 2 tbsp olive oil (30ml)

Instructions

  1. Rinse red lentils under cold water until clear. Combine with 2 cups of water in a saucepan, bring to a boil, then simmer for about 15 minutes until tender. Drain if needed.
  2. Boil sweet potatoes in water until fork-tender, about 10-12 minutes. Drain and mash in a large bowl.
  3. Mix cooked lentils, onion, garlic, cumin, coriander, and oats into the mashed sweet potatoes until well combined.
  4. Shape the mixture into small patties (about 2 inches in diameter). If too wet, add more oats as necessary.
  5. Heat olive oil in a skillet over medium heat. Cook patties for about 4 minutes on each side until golden brown and crispy.
