  • 4 large Russet potatoes (about 1.5 lbs)
  • 1 lb lean ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium onion, finely chopped
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs

Instructions

  1. Peel and chop the potatoes into uniform pieces. Boil in salted water until fork-tender (15-20 minutes).
  2. Meanwhile, in a skillet over medium heat, cook ground beef and onions until browned; season with salt, pepper, and garlic powder.
  3. Drain the potatoes and mash until smooth. Mix in salt, pepper, and half of each type of cheese.
  4. Once cooled slightly, form potato balls by flattening a portion of mashed potatoes, adding beef filling and remaining cheese in the center before enclosing it.
  5. Roll each ball in breadcrumbs. Preheat oven to 400°F (200°C) and bake for 25-30 minutes until golden brown.
