  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs

  • For Bang Bang Sauce: 1/4 cup mayonnaise
  • 2 tbsp sriracha sauce (adjust to taste)
  • 2 tbsp sweet chili sauce

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut salmon fillets into bite-sized pieces (about 1 inch).
  3. Set up a breading station: Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in the third; season each with salt and pepper.
