Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 cup vegetable oil (for frying)
  • 3 tbsp Sriracha sauce
  • ½ cup mayonnaise
  • 2 tbsp honey
  • Salt and pepper (to taste)
  • 4 cups cooked rice (for serving)
  • Fresh vegetables (optional: cucumber, carrots)

Instructions

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each chicken piece in flour, dip in egg, then coat with panko.
  3. Heat oil in a large skillet over medium-high heat until hot. Fry breaded chicken pieces for about 5-7 minutes per side until golden brown.
  4. While frying, whisk together Sriracha sauce, mayonnaise, and honey until smooth.
  5. Once cooked, drain chicken on paper towels. Serve over rice topped with crispy chicken and drizzle with bang bang sauce.
