1 medium onion, finely chopped
1 cup carrots, diced
1 cup frozen peas
1 cup low-sodium chicken broth
1 tsp garlic powder
1 tsp dried thyme
2 cups mashed potatoes (prepared with butter and milk)
Instructions
Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
In a large skillet over medium heat, sauté chopped onions and diced carrots until tender, about five minutes.
