  • 2 cups carrots, sliced
  • 1.5 cups Yukon Gold potatoes, cubed
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare Your Ingredients: Chop all vegetables into bite-sized pieces—dice the onion, slice the carrots, and cube the potatoes.
  2. Sautéing Time: Set your Instant Pot to 'Sauté' mode. Add olive oil and once hot, sauté the onions and garlic for about 3 minutes until fragrant.
  3. Brown That Chicken: Add boneless chicken thighs to the pot and brown for about 5 minutes on each side until golden.
