  • 2 lbs beef chuck roast, cut into chunks
  • 2 cups apple cider
  • 3 medium carrots, diced
  • 2 lbs Russet or Yukon Gold potatoes, peeled and chopped
  • 1 medium onion, chopped
  • 2 tsp fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove from pot.
  2. In the same pot, add onions and sauté until translucent. Return beef to pot.
  3. Add carrots and pour in apple cider, scraping up any browned bits. Bring to a simmer.
  4. Cover and reduce heat to low; simmer for about 2 hours until beef is tender.
  5. Meanwhile, boil potatoes in salted water until fork-tender. Drain and mash with butter, cream, salt, and pepper.
  6. Serve stew over mashed potatoes.
