  • 3 garlic cloves, minced
  • 1 cup fresh dill, chopped
  • 6 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 2 cups pierogi (store-bought or homemade)

Instructions

  1. Prepare the Vegetables: Peel and dice the potatoes into small cubes. Chop the onion and mince the garlic. Set aside.
  2. Sauté Aromatics: In a large pot over medium heat, melt 2 tablespoons of butter and add the onions. Sauté until translucent (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  3. Cook Potatoes: Stir in diced potatoes and pour in vegetable broth. Bring to a boil, reduce heat, and simmer for 15–20 minutes until potatoes are tender.
  4. Blend Mixture: Using an immersion blender or regular blender, purée half of the soup until creamy while leaving some chunks for texture. Return to pot over low heat.
  5. Stir in Cream and Dill: Add heavy cream and chopped dill into the blended mixture. Stir well and let simmer on low heat for another 5 minutes.
  6. Add Pierogi: Carefully add pierogi to the pot and warm through for about 3–5 minutes. Serve hot with additional dill as garnish.
