  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the chopped onion in a little oil until translucent.
  2. Add the minced garlic and cook until fragrant.
