Cozy Butternut Squash Scones are a warm, flaky treat infused with the natural sweetness of roasted butternut squash, perfect for breakfast or a delightful afternoon snack.

  • 2 cups all-purpose flour
  • 1/4 cup sugar (adjust to taste)
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold, cubed)
  • 3/4 cup fresh butternut squash (roasted and pureed)
  • 1/2 cup whole milk (or buttermilk)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the butternut squash in half, scoop out seeds, and roast cut-side down on a baking sheet for about 25-30 minutes until tender. Allow it to cool slightly before scooping out the flesh and mashing it into a smooth puree.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until well combined.
  4. Add cold butter cubes to the dry mixture. Using a pastry cutter or two forks, blend until the mixture resembles coarse crumbs.
  5. Fold in the butternut squash puree and milk until just combined. Avoid overmixing.
  6. Turn the dough onto a floured surface and pat it into a circle about one inch thick. Cut into wedges or use cookie cutters for fun shapes. Transfer to the prepared baking sheet.
  7. Bake for 15-20 minutes until golden brown on top.
  8. Let them cool slightly before serving with butter or cream cheese spread.
