1/2 cup unsalted butter (cold, cubed)
3/4 cup fresh butternut squash (roasted and pureed)
1/2 cup whole milk (or buttermilk)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut the butternut squash in half, scoop out seeds, and roast cut-side down on a baking sheet for about 25-30 minutes until tender. Allow it to cool slightly before scooping out the flesh and mashing it into a smooth puree.
In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until well combined.
Add cold butter cubes to the dry mixture. Using a pastry cutter or two forks, blend until the mixture resembles coarse crumbs.
Fold in the butternut squash puree and milk until just combined. Avoid overmixing.
Turn the dough onto a floured surface and pat it into a circle about one inch thick. Cut into wedges or use cookie cutters for fun shapes. Transfer to the prepared baking sheet.
Bake for 15-20 minutes until golden brown on top.
