Ingredients

Scale
  • 1 lb lean ground turkey
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder (adjust to taste)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (mix of colors)
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Sauté Your Base: In a large pot over medium heat, drizzle 1 tbsp olive oil and sauté the chopped onion until translucent (about 5 minutes). Add minced garlic towards the end for fragrance.
  2. Brown the Turkey: Add the ground turkey to the pot, breaking it up with a wooden spoon. Cook until browned (about 6–8 minutes), seasoning with salt and pepper.
  3. Add Vegetables: Stir in the chopped bell peppers and cook down slightly for about 3 minutes until tender yet crunchy.
  4. Mix in Canned Goodness: Pour in the diced tomatoes (with juices) and kidney beans. Stir well to combine all ingredients.
  5. Spice It Up: Sprinkle chili powder and cumin over the mixture. Stir well and let the spices mingle for about 2 minutes.
  6. Simmer: Reduce heat and let your chili simmer uncovered for about 30 minutes to meld flavors beautifully.
  7. Serve hot in bowls, garnished with toppings like cheese or fresh cilantro if desired.
