6–8 medium-sized tangerines
1 cup granulated sugar
1/2 cup water
2 tbsp fresh lemon juice
Instructions
Wash the tangerines thoroughly and slice them in half. Juice the fruit into a bowl, saving the rinds.
Finely chop the reserved rinds for flavor infusion without overpowering the marmalade.
In a large pot, mix tangerine juice, chopped rinds, sugar, and water. Stir gently over medium heat until the sugar dissolves (about 5 minutes).
Bring the mixture to a gentle boil, then reduce heat and let it simmer for 30-40 minutes until thickened. The marmalade is ready when you can draw a spoon through it and see the bottom of the pot briefly.
Stir in fresh lemon juice and continue to simmer for another five minutes to blend flavors.
Pour hot marmalade into sterilized jars, seal tightly, and allow cooling at room temperature before storage.
