  • 2 medium sweet potatoes (about 1 lb)
  • 2 cups tart apples (e.g., Granny Smith), chopped
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup chopped pecans (optional)
  • 2 tbsp unsalted butter, melted
  • 2 tbsp maple syrup

Instructions

  1. Preheat oven to 400°F (200°C). Wash the sweet potatoes and pierce them several times with a fork.
  2. Place the sweet potatoes on a baking sheet lined with parchment paper and bake for 45-60 minutes until tender.
  3. While baking, core and chop apples. In a bowl, mix apples with brown sugar, cinnamon, and nuts if using.
  4. Once baked, let cool slightly, slice open lengthwise, and scoop out some flesh into a bowl.
  5. Combine scooped sweet potato flesh with the apple mixture until well blended. Fill the potato skins with this mixture.
  6. Return stuffed sweet potatoes to the oven for an additional 15-20 minutes. Drizzle with melted butter and maple syrup before serving.
