4 large Hatch chiles
1 pound ground turkey
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1 medium onion, diced
3 cloves garlic, minced
2 tsp chili powder
1 tsp cumin
Instructions
Preheat your oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
Carefully slice each Hatch chile lengthwise down one side and remove seeds and membranes.
In a skillet over medium heat, brown the ground turkey with diced onion and minced garlic for about 5-7 minutes until cooked through. Drain excess fat if necessary.
Stir in chili powder and cumin, mixing until evenly coated. Add half of the shredded cheese and stir until melted.
