  • 4 boneless, skinless chicken breasts (about 1.5 lb)
  • 3 fresh limes (juiced)
  • 1 cup fresh mint leaves (chopped)
  • 4 garlic cloves (minced)
  • 1/2 cup unsalted butter
  • 4 crusty baguette-style rolls
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix lime juice, chopped mint, minced garlic, olive oil, salt, and pepper. Marinate the chicken breasts for at least 30 minutes.
  3. Place marinated chicken on the baking sheet and roast for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  4. While the chicken roasts, melt butter in a saucepan over low heat and sauté minced garlic until fragrant.
