A refreshing and vibrant salad bursting with zesty flavors, creamy tahini, and hearty chickpeas—perfect for picnics or cozy nights in.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (5 oz) tuna packed in water, drained
  • 1/4 cup tahini
  • 2 tbsp freshly squeezed lemon juice
  • 1 garlic clove, minced
  • 1/2 cup cucumber, diced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the canned chickpeas under cold water to remove excess sodium.
  2. In a bowl, combine tahini, lemon juice, minced garlic, olive oil, salt, and pepper. Whisk until smooth. If too thick, add a splash of water.
  3. In a large mixing bowl, add the chickpeas and drained tuna. Gently fold together using a spatula.
  4. Toss in the diced cucumber along with any other preferred veggies like bell peppers or cherry tomatoes.
  5. Pour your tahini dressing over the chickpea-tuna mixture. Gently fold until well combined. Taste-test and adjust seasoning if necessary.
  6. Let the salad chill in the fridge for about 30 minutes before serving to allow flavors to meld.
