  • 1/4 cup lime juice (freshly squeezed)
  • 1 cup coconut milk (full-fat)
  • 1 cup jasmine rice
  • 3 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey

Instructions

  1. Marinate the pork by mixing grated ginger, minced garlic, lime juice, soy sauce, and honey. Place the pork in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 1 hour or overnight for maximum flavor.
  2. Rinse jasmine rice under cold water until clear. In a saucepan, combine rinsed rice with coconut milk and equal parts water (1 cup each). Bring to a boil over medium heat.
  3. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until rice absorbs all liquid. Let it sit covered for an additional 5 minutes.
  4. Preheat grill or skillet over medium-high heat. Remove pork from marinade and discard excess marinade. Grill or sear for about 4-5 minutes per side until cooked through (internal temperature of 145°F).
  5. Let pork rest for 5 minutes before slicing into medallions. Serve sliced pork over coconut rice and drizzle with remaining juices.
