3–4 boneless, skinless chicken breasts
1/4 cup freshly squeezed lime juice
2 tbsp olive oil
1 tsp garlic powder
1 tsp ground cumin
Salt and pepper to taste
1 cup long-grain rice (uncooked)
1 cup diced bell peppers (mix of red and green)
2 tbsp low-sodium soy sauce
Instructions
Preheat your oven to 400°F (200°C) or prepare your grill.
In a bowl, combine chicken breasts with lime juice, olive oil, garlic powder, cumin, salt, and pepper until evenly coated.
Cut large squares of aluminum foil.
Place cooked rice in the center of each square, followed by seasoned chicken pieces and diced bell peppers.
Whisk together soy sauce and an additional drizzle of olive oil in another bowl. Drizzle over each foil pack before sealing tightly.
Place the foil packs on a baking sheet or grill. Cook for about 25-30 minutes until chicken reaches an internal temperature of at least 165°F (75°C) and rice is fluffy.
Carefully unwrap each foil pack (watch out for steam) and serve hot with extra lime juice or fresh cilantro if desired.
