  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth (about 960ml)
  • 1 cup heavy cream (240ml)
  • 2 tbsp olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes. Dice them into small cubes for quicker cooking. Finely chop the onion and mince the garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté the onion until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  3. Add diced potatoes to the pot along with vegetable broth. Bring to a boil, then reduce heat to low and let it simmer covered until potatoes are tender, about 15 minutes.
  4. Blend the soup using an immersion blender until smooth or transfer to a traditional blender in batches after cooling slightly.
  5. Return blended soup to low heat; stir in heavy cream and season with salt and pepper. Heat through without boiling.
