Ingredients

Scale
  • 6 slices thick-cut bacon
  • 3 medium russet potatoes (about 1.5 lbs), diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy. Remove and drain on paper towels, leaving about 2 tablespoons of drippings in the pot.
  2. Sauté the onions in the bacon drippings for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Stir in diced potatoes and thyme; pour in chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (15-20 minutes).
  4. Use an immersion blender or transfer some soup to a blender to purée until creamy while leaving some chunks intact.
  5. Return the blended mixture to heat. Stir in heavy cream and cheddar cheese until melted and fully combined. Season with salt and pepper.
  6. Serve warm, garnished with crispy bacon pieces.
