  • 34 boneless, skinless chicken breasts
  • 2 tbsp lime juice
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 2 ears of fresh corn or 2 cups frozen corn (thawed)
  • 1/2 cup sour cream (or Greek yogurt)
  • Zest of 1 lime
  • 1/4 cup chopped cilantro
  • Additional cilantro for garnish
  • 1 avocado, diced

Instructions

  1. For the Marinade: In a mixing bowl, whisk together lime juice, chili powder, salt, and pepper.
  2. Add chicken breasts and coat thoroughly. Marinate in the fridge for at least 30 minutes.
  3. For the Chicken: Preheat grill or grill pan over medium-high heat.
  4. Grill marinated chicken for about 6-7 minutes on each side until cooked through.
  5. Remove from heat and let rest.
  6. For the Corn: Grill corn cobs for about 10 minutes until charred, turning occasionally.
  7. Remove from heat and let cool slightly before cutting off kernels.
  8. For the Sauce: In a bowl, combine sour cream (or Greek yogurt), lime zest, and chopped cilantro. Mix until smooth.
  9. To Assemble: Slice grilled chicken into strips.
  10. In serving bowls, layer grilled corn first followed by sliced chicken.
  11. Drizzle with sauce and top with diced avocado and additional cilantro if desired.
