3–4 boneless, skinless chicken breasts
2 tbsp lime juice
2 tsp chili powder
Salt and pepper to taste
2 ears of fresh corn or 2 cups frozen corn (thawed)
1/2 cup sour cream (or Greek yogurt)
Zest of 1 lime
1/4 cup chopped cilantro
Additional cilantro for garnish
1 avocado, diced
Instructions
For the Marinade: In a mixing bowl, whisk together lime juice, chili powder, salt, and pepper.
Add chicken breasts and coat thoroughly. Marinate in the fridge for at least 30 minutes.
For the Chicken: Preheat grill or grill pan over medium-high heat.
Grill marinated chicken for about 6-7 minutes on each side until cooked through.
Remove from heat and let rest.
For the Corn: Grill corn cobs for about 10 minutes until charred, turning occasionally.
Remove from heat and let cool slightly before cutting off kernels.
For the Sauce: In a bowl, combine sour cream (or Greek yogurt), lime zest, and chopped cilantro. Mix until smooth.
To Assemble: Slice grilled chicken into strips.
