3–4 boneless, skinless chicken breasts
1 cup orzo pasta
2 tbsp Cajun seasoning
1 cup heavy cream
1 cup freshly grated Parmesan cheese
3 cloves fresh garlic, minced
3 cups low-sodium chicken broth
2 tbsp olive oil
Instructions
Chop the chicken into bite-sized pieces, mince the garlic, and measure out the broth and cream.
In a large pot over medium heat, add olive oil. Once hot, add chicken pieces seasoned with Cajun seasoning. Sauté until golden brown (about five minutes).
Add minced garlic to the pot immediately after removing the chicken. Stir until fragrant (about 30 seconds).
Stir in uncooked orzo pasta along with chicken broth and heavy cream. Bring to a gentle simmer, stirring occasionally until orzo is al dente (about ten minutes).
Reduce heat and add freshly grated Parmesan cheese. Stir until melted and well combined.
Transfer portions to bowls or plates and garnish with optional chopped green onions for added freshness.
