  • 34 boneless, skinless chicken breasts
  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Vegetable oil for frying

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to about an inch thick.
  2. In a large bowl, whisk together buttermilk, salt, and pepper. Add chicken and marinate for at least one hour or overnight.
  3. In a separate bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat two eggs until frothy. Dip marinated chicken in egg wash and coat with the flour mixture.
  5. Heat vegetable oil in a deep skillet to about 350°F (175°C).
  6. Carefully fry each piece for about 6-8 minutes per side until golden brown and cooked through (internal temperature should reach at least 165°F/74°C).
  7. Drain on paper towels before serving hot.
