4 boneless, skinless chicken breasts
2 cloves fresh garlic, minced
2 tbsp olive oil
Salt and pepper to taste
1 cup heavy cream
1 cup low-sodium chicken broth
1 tsp dried Italian herbs (basil, oregano, thyme)
8 oz fettuccine or penne pasta
Instructions
Gather all ingredients. Mince the garlic and let the chicken breasts reach room temperature.
In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper. Cook for about 5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, add more oil if needed and sauté minced garlic until fragrant (about 1 minute). Pour in chicken broth and dried herbs; let simmer for about 5 minutes.
Stir in heavy cream and mix well until combined. Allow to simmer for another few minutes as it thickens.
Return the chicken to the skillet, letting it simmer in the sauce for a few more minutes while you cook the pasta according to package instructions in salted water.
