Ingredients

Scale
  • 1 lb flank steak, sliced thinly
  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup low-sodium beef broth
  • 2 tsp cornstarch
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. Slice the flank steak against the grain into thin strips. Chop bell peppers and onion into bite-sized pieces. Mince garlic.
  2. In a bowl, combine soy sauce, beef broth, minced garlic, and cornstarch. Add sliced flank steak, ensuring it's well-coated. Marinate for at least 15 minutes.
  3. Heat 2 tbsp oil in a large skillet over medium-high heat until shimmering.
  4. Add marinated beef in batches and stir-fry for about 3-4 minutes until browned but not fully cooked. Remove from skillet.
  5. In the same skillet, add another tablespoon of oil if necessary. Stir-fry bell peppers and onions for about 4-5 minutes until tender yet crisp.
  6. Return beef to the skillet with vegetables, pour remaining marinade over everything, and cook for an additional 2-3 minutes until sauce thickens slightly.
