  • 1 lb lean ground turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 tsp ground cumin
  • 1 tsp chili powder

Instructions

  1. Preheat oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the ground turkey until browned, about 7-10 minutes.
  3. Stir in the rinsed black beans, cumin, and chili powder. Simmer for about 5 minutes.
  4. Warm tortillas until pliable. Spoon the turkey mixture into each tortilla and roll tightly.
  5. Place rolled tortillas seam-side down in the baking dish. Pour enchilada sauce over them and sprinkle cheese on top.
  6. Cover with aluminum foil and bake for 20 minutes. Remove the foil for the last 5 minutes to allow cheese to melt.
