Ingredients

Scale
  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 8 oz pasta (penne or fettuccine)
  • 2 cups fresh basil leaves
  • 1 cup grated Parmesan cheese
  • 1/3 cup pine nuts
  • 1/2 cup extra virgin olive oil
  • 3 garlic cloves
  • 2 tbsp lemon juice

Instructions

  1. Prepare the pesto by blending basil, pine nuts, Parmesan, garlic, and lemon juice in a food processor. Slowly drizzle in olive oil until smooth.
  2. Cook pasta in salted boiling water until al dente; reserve 1/2 cup cooking water before draining.
  3. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then sear until golden brown (5-7 minutes per side). Let rest before slicing.
  4. Toss drained pasta with pesto in the skillet over low heat, adding reserved water to achieve desired creaminess.
  5. Serve topped with sliced chicken and additional pesto if desired.
