  • 2 lbs beef chuck roast
  • 4 dried guajillo peppers
  • 1 medium yellow onion, chopped
  • 4 cloves fresh garlic, minced
  • 1 tsp Mexican oregano
  • 4 cups low-sodium beef broth
  • 2 tbsp freshly squeezed lime juice
  • Corn tortillas for serving

Instructions

  1. Cut the beef chuck roast into large chunks and season with salt and pepper. Heat a large pot over medium-high heat and sear the beef until browned (5-7 minutes per side). Remove from pot and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until softened (3-4 minutes). Add dried guajillo peppers and Mexican oregano; stir to combine.
  3. Pour in the beef broth and bring to a boil. Return the browned beef to the pot, reduce heat to low, cover, and simmer for 2-3 hours until tender.
  4. Remove the meat from the pot, shred it with two forks, and return it to the broth.
  5. Warm corn tortillas on a skillet. Fill each tortilla with shredded beef mixture, fold in half, and serve immediately with lime wedges and diced onions.
