1 lb lean ground beef
1 cup cooked quinoa
1 cup cherry tomatoes, halved
2 cups romaine lettuce, chopped
1 cup shredded cheddar cheese
1/4 cup ketchup
2 tbsp mustard
Instructions
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until fluffy.
In a large skillet over medium heat, add 1 lb of ground beef. Cook for about 5 to 7 minutes until browned and fully cooked. Drain excess fat and season with salt and pepper.
While the beef is cooking, chop 2 cups of romaine lettuce and slice 1 cup of cherry tomatoes in half.
In large bowls, start with a generous scoop of cooked quinoa as your base. Top with browned ground beef, followed by chopped romaine lettuce and halved cherry tomatoes.
Sprinkle 1 cup of shredded cheddar cheese over each bowl. Drizzle with ketchup (1/4 cup) and mustard (2 tbsp).
