  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 8 flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cream of chicken soup
  • ½ cup sour cream
  • 1 can (4 oz) diced green chiles
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Boil water and cook chicken breasts for about 20 minutes until fully cooked. Shred the chicken.
  3. In a bowl, mix shredded chicken with minced garlic, sour cream, cream of chicken soup, green chiles, and half the cheese.
  4. Spoon filling into each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Combine remaining cream of chicken soup with chicken broth; pour over enchiladas. Top with remaining cheese.
