  • 2 medium waxy potatoes, diced
  • 2 tbsp curry powder (adjust to taste)
  • 1 can (400ml) coconut milk
  • 2 cups low-sodium vegetable broth
  • 1 cup short-grain Japanese rice (or any rice)

Instructions

  1. Chop the onion, carrots, and potatoes into bite-sized pieces.
  2. Heat 1 tablespoon of oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add carrots and potatoes to the pot. Sauté for an additional 3 minutes until coated with onion.
  4. Stir in the curry powder and mix for another minute until aromatic.
  5. Pour in the coconut milk and vegetable broth. Bring to a gentle simmer for about 10 minutes, stirring occasionally until slightly thickened.
