  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 tsp baking soda
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, baking soda, ground ginger, ground cinnamon, and salt until well combined.
  3. In another bowl, mix melted coconut oil, molasses, and maple syrup until smooth.
  4. Gradually add the wet ingredients to the dry mixture and stir until you form a thick dough.
  5. Shape the dough into small balls and place them on the prepared baking sheet with space in between.
  6. Bake for 10-12 minutes until the edges are firm but the center remains soft. Cool briefly before transferring to a wire rack.
