  • 3 tbsp cold water
  • 1 can (15 oz) pumpkin puree
  • ¾ cup brown sugar
  • 1 tsp ground cinnamon
  • ½ cup heavy cream
  • 3 large eggs
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix flour and salt. Cut in butter until crumbly.
  3. Gradually add cold water, mixing until dough forms.
  4. Roll out the dough and place it in a pie dish, trimming the edges as needed. Prick with a fork.
  5. In a large bowl, whisk together pumpkin puree, brown sugar, cinnamon, heavy cream, and eggs until smooth.
  6. Pour the filling into the prepared crust.
  7. Bake in preheated oven for 15 minutes.
  8. Reduce temperature to 350°F (175°C) and bake for an additional 30-40 minutes or until set.
  9. Let cool on a wire rack before slicing.
