  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp honey
  • 1/4 cup chopped cilantro
  • 6 large lettuce leaves (butter or romaine)
  • 1 cup shredded carrots
  • 1 bell pepper, sliced
  • 1 cucumber, sliced

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat. Season chicken breasts with salt and pepper. Grill for 5-7 minutes per side until fully cooked and marked.
  2. In a bowl, mix peanut butter, soy sauce, lime juice, honey, minced garlic (optional), and cilantro until smooth. Add warm water as needed to achieve desired consistency.
  3. Once the chicken is grilled and cooled slightly, slice it into thin strips. Lay out lettuce leaves and layer with chicken, carrots, bell peppers, and cucumber slices. Drizzle with peanut sauce.
  4. Fold in the sides of each lettuce leaf and roll tightly from the bottom to create wraps.
  5. Serve on plates with extra peanut sauce drizzled on top.
