3–4 lbs Beef Chuck Roast
1.5 lbs Baby Potatoes
6 cloves Fresh Garlic, minced
1/2 cup Unsalted Butter, cubed
2 cups Low-Sodium Beef Broth
1 large Onion, chopped
1 tsp Thyme (fresh or dried)
Salt and Pepper to taste
Instructions
Chop the onion and mince the garlic. Set aside the baby potatoes whole for even cooking.
In a hot skillet over medium-high heat, sear each side of the beef chuck roast until browned to enhance flavor.
Place the seared beef in the slow cooker.
Add chopped onions, minced garlic, and whole baby potatoes on top.
